Four Ingredient Gluten-Free Pancakes

Feeling creative and looking for a new, yet simple breakfast for the weekend? We’ve got you covered. With this easy, four ingredient pancake recipe, you’ll not only discover a new favorite weekend activity, but also enjoy a healthy, gluten-free yet filling breakfast dish.

What you’ll need:

  • 1 egg
  • 1 ripe banana
  • 2 tablespoons of gluten-free oats OR regular oats for a non-gluten-free option
  • 2 tablespoons of chopped walnuts

Directions:

  1. Mash banana in a bowl. Add oats and egg and mix all together until blended well.
  2. Lightly spray non-stick skillet with cooking spray and heat over medium-low heat.
  3. Pour the batter into the skillet into 3-4 pancakes (or fewer depending on how big you prefer).
  4. Add chopped walnuts and let cook for about 4 minutes, then flip. 
  5. Once golden, remove and let cool. 
  6. We like to top with almond butter, honey and our favorite berries, but you can top with syrup.
